What is it about about foods that determines the effect it has on the body in regards to alkaline and acids forming food? I know that they burn the food or something and depending on the ph value of the ash determines if it is alkaline or not. Is it the minerals that are in the food or lack of that make determine the ph?

You are correct. Once food is processed and digested, it leaves an ash residue in the body. This can often have a much different pH than the whole food had before it was eaten. It is primarily the minerals present that determine the value. One of the best examples of this phenomenon is that of lemons and limes. These are obviously very acidic foods. They both contain high amounts of ionic calcium, magnesium, and potassium and can have an alkalinizing effect on the body.
