So what makes food acid forming then? Is it just the lack of alkaline minerals? combined with the hcl that was used to break down the food?

It is the totality of all of the food components put together. The minerals do offer a very important contribution; some other factors are vitamins, phytonutrients, chlorophyll, sugars, amino acids, enzymes, and fatty acids. The total residue after digestion is what determines whether a particular food has an acidifying or alkalinizing effect on the body.

Keep in mind that most highly-processed foods are acidic. They have had processed sugars, fats, chemicals, additives, and flavorings added to them. They are generally preserved by the use of synthetic chemicals and, often, the processing methods themselves can add minor “artifacts” that could be acid-forming as well. In practice, probably the easiest way to make use of this acid/alkaline food idea is to get a chart that has individual foods listed and then use this information in your food choices. Many practitioners recommend an 80/20 split in favor of alkaline foods.
